乳酸菌的生理功能及在畜牧业中的应用

摘要(Abstract):
乳酸菌通过发酵产生的有机酸、特殊酶系、细菌表面成分等物质,在体内能发挥许多生理功能,如改善胃肠道功能、提高免疫能力、抗菌、降低胆固醇、调节血脂等。其中的部分功能已被应用到畜牧业中,尤其在增强牛奶保健功能、提高青贮品质、提高畜禽生产性能、降低畜产品贮藏对肉品风味的影响等方面已取得较好效果。
