乳酸链球菌素(Nisin)的特性及应用Characteristics and application of Nisin

摘要(Abstract):
乳酸链球菌素(Nisin)是食品药品监督管理局(FDA)允许用作食品添加剂的天然肽类细菌素,其在畜牧和医学中同样具有巨大的应用前景,但Nisin在应用中仍存在较多问题,例如它的降解、与食品成分的相互作用均会限制它的使用,文章简要讨论Nisin在应用中存在的问题以及新进展和新前景。
